But there is one catch, the recipe cannot be a breakfast or brunch dish or feature on a breakfast or brunch menu. The winning dish will then be selected by Bord Bia ‘eggsperts’ with the help of food and hospitality writer, Georgina Campbell.

The main prize for the winner is a €500 One4All Voucher, a €500 voucher to spend in an Irish hotel or restaurant of the winners choosing and their recipe will feature in a national newspaper.  The four regional winners chosen will also receive prizes worth €250 each.

All entries must be submitted online at www.ireland-guide.com and accompanied by a photo of the finished dish. Closing date for entries is Tuesday, April 29, at 12 noon.
